Gluten Free Cornbread
Ingredients

blanched almond flour

cup
organic cornmeal

TBSP
gluten-free baking powder
1/2
tsp
salt
1/4
cup
coconut sugar
3/4
cup
honey
3/4
cup
butter
melted
5
eggs
yolks and eggs separated
1 1/4
cup
almond milk
1
tsp
vanilla
Instructions
Preheat oven to 350 degrees and grease a
9×13 pan
with butter.
Sift together the dry ingredients and set aside.
Beat the egg whites until stiff and set aside.
In a separate bowl, beat together the honey, butter, egg yolks, almond milk and vanilla.
Pour wet ingredients into dry ingredients and stir until combined.
Gently fold in the egg whites, then pour into
9×13 pan
.
Bake for about 25-30 minutes, until knife inserted comes out clean.
Let cool for about 10 minutes before eating.
Recipe Notes
To make this over-the-top, put on a dab of butter and drizzle with honey!
