Instructions
  1. Place everything except the red bell pepper and cucumbers into a saucepan.
  2. Heat over medium-high heat until boiling, then cook for an additional 1-2 minutes.
  3. Meanwhile, cut the ends off the cucumbers and slice into spears, then place them in the empty mason jar.
  4. Add the red bell pepper to the jar.
  5. Once the mixture is done boiling, carefully pour over the cucumbers and peppers.
  6. Place lid on jar and seal.
  7. Let cool to room temperature, then place in fridge for 3-4 days before eating.
  8. Note: Pickles will last for approximately one month.
