Cookie Dough Truffles (Grain-Free/Vegan)
  1. Melt 1 cup chocolate chips in double boiler or microwave and set aside to cool slightly.
  2. Sift together the dry ingredients in a bowl.
  3. Add the coconut oil and stir.
  4. Then add the maple syrup or honey, vanilla and chocolate chips.
  5. Stir to combine, roll into balls, and place onto a baking sheet covered with parchment paper.
  6. Place in fridge for about 15 minutes.
  7. Remove from fridge, dip in melted chocolate, and place back in fridge for about 20-30 minutes, until chocolate has hardened.
  8. Enjoy!

These do best stored in the fridge, and will last a few days at least…if everyone doesn’t gobble them up first!
