Clean Sesame Chicken
Easy to put together, but tastes like you spent a bunch of time on it!

Ingredients
For the chicken:

cup
tapioca flour

boneless, skinless chicken breasts

cup
avocado or coconut oil
For the sauce:
1/4
cup
coconut aminos
(I get mine at Whole Foods)

water

toasted sesame oil

coconut sugar

rice vinegar

tsp
fresh grated ginger

cloves
minced garlic

cup
toasted sesame seeds

tapioca flour
Optional for topping:
green onions
Instructions
In a large bowl, whisk together the ingredients for the chicken. Add the chicken and stir together.
Heat a large skillet or
wok
with the avocado or coconut oil over medium-high heat.
Add the chicken, only stirring a few times, so it can crisp up on the outside.
While that’s cooking, make the sauce by whisking together all the sauce ingredients.
Once the chicken is cooked through and golden brown, pour the sauce over the top.
Toss with the chicken and cook for a few minutes, until the sauce has thickened.
Remove promptly and top with sliced green onions, if desired.
I served mine over rice, but you could serve it over cauliflower rice!
