Sweet Potato Beef Paprikash

This recipe is going to be on next week’s menu. It was so good, we all had seconds!

Recipe: Sweet Potato Beef Paprikash (served our family of 7 + a few leftovers)

3 lbs ground beef

3 TBSP olive oil

1 onion, chopped

3 tsp paprika

2 tsp salt

1 tsp black pepper

1 tsp crushed red pepper flakes

1/2 cup water

1 (4-oz) can tomato paste

3 sweet potatoes

Preheat oven to 350 degrees. Peel sweet potatoes and slice to about 1/4″ thickness. Lay a single layer in a 9×13 pan, and drizzle with a bit of the olive oil. Heat the remaining olive oil in a large skillet, add onion and cook until translucent. Add in the meat, tomato paste, water, and seasonings and cook until meat is browned. Pour a layer of meat over the sweet potatoes in the dish. Layer another layer of sweet potatoes, then meat, then potatoes, then meat, until everything is used up. Cover tightly with foil and bake for about 35-40 minutes, until sweet potatoes are cooked through. Let sit for a few minutes before serving.

    This is one of the few dishes I’ve made while doing whole30 that my husband really liked. I added extra salt and some garlic and onion powder, and left out the red pepper flakes, and it was so delicious. I can’t wait to eat it again for lunch tomorrow. I cut the recipe in half since I’m cooking for 2, but I’ll have to make the whole recipe next time.
