Paleo Mocha Frappuccino
I haven’t had coffee in 6 weeks, but this warm weather is making me reminisce of summer days with a Frappuccino in hand. Unfortunately, the ones from Starbucks are filled with sugar, dairy (or soy) and a bunch of other junk. So here’s my substitute! I know, I know…a Frappuccino is hardly “Paleo,” but at least it’s a pretty clean version of this delicious drink!
Recipe: Paleo Mocha Frappuccino (makes 2 small/medium servings)
1/2 cup strong coffee
1/4 cup full-fat, unsweetened coconut milk, refrigerated (I used the solid part from the top of the milk, not the liquid part)
2 TBSP honey
1.5-2 cups ice
1 TBSP cocoa powder
1/2 tsp vanilla
Brew coffee. Pour a 1/2 cup into a blender or immersion blender cup. Add the cocoa powder and stir to dissolve. Add remaining ingredients and blend (I used an immersion blender to whip it up fast). Continue to add ice until desired consistency is achieved. Enjoy promptly!
